Healthy All-natural Flourless 2ingredients Protein Pancakes

Breakfast time again! I'm Starving! 
Nothing beats delicious pancakes in the morning .
This sweet and fluffy yet guilt-free pancakes will wake your taste bud up.

Serves 1 comfortably 

You'll need:

2 medium 5" sweet potato ( cooked ) 
2 egg whites + 1 whole egg ( or 3 egg whites or 2 full eggs )

Optional :
Yogurt fruits cinnamon and honey for toppings
Some baking powder for extra fluffiness ( about 1 tsp )

Steps:

1. Cut sweet potatoes into chunks. 
2. Blend everything until smooth. Unless you like chunks in pancakes. I blended with the skin on it for extra nutrition goodness :D
3. Lightly grease your skillet on medium heat. Cook and flip once, 2-3 minutes on each side. 


Serve ! Oh yummmmm

Smooth Creamy Foolproof LEMON CURD

100% guarantee foolproof Lemon Curd! How many times do you need to strain your curd to achieve the perfect smooth consistency? 

Follow this recipe and keep your strainer away! 


You'll need :

  • 3 oz. (6 Tbs.) unsalted butter, softened at room temperature
  • 1 cup sugar
  • 2 large eggs
  • 2 large egg yolks
  • 2/3 cup fresh lemon juice
  • 1 tsp. grated lemon zest
Steps:

1. In a large bowl, beat the butter and sugar together, about 2 min. 

2. Slowly add the eggs and yolks. Beat for 1 min. Mix in the lemon juice. The mixture will look curdled, but it will smooth out as it cooks.





3.In a medium, heavy-based saucepan, cook the mixture over low heat until it looks smooth. (The curdled appearance disappears as the butter in the mixture melts.) Increase the heat to medium and cook, stirring constantly, until the mixture thickens, about 15 minutes. It should leave a path on the back of a spoon and will read 170°F on a thermometer. Don't let the mixture boil.




Remove the curd from the heat; stir in the lemon zest. Transfer the curd to a bowl. Press plastic wrap on the surface of the lemon curd to keep a skin from forming and chill the curd in the refrigerator. The curd will thicken further as it cools. Covered tightly, it will keep in the refrigerator for a week and in the freezer for 2 months.

Lemon cinnamon oatmeal yogurt mask

I know the name of the title is a bit long because I just copy from the ingredients. Lazy me!
Lack of sleep before exam? Find your skin is aging??
And.... Pimples are popping out? 
Oh no!
Need rescue!
Here is a quick, homemade , affordable , and EDIBLE  mask!

You'll need :
1 tbsp Greek yogurt 
1 tbsp rice flour ( or almond flour )
1 tsp cinnamon powder
2 tbsp porridge oats
3 tbsp milk
1 wedge of lemon

Steps :
1. Cook the oatmeal with milk in the microwave for 40 seconds. Let cool.
2. Stir in the rest of the ingredients and chill in the fridge.
3. Apply a thick layer of cool mask on your clean face and wait for 15 minutes. 
4. Wipe off the mask and wash your face thoroughly with cold water.

Reveal the AMAZING RESULT!

Leftovers? Add in honey and EAT IT :D

Lemon contains Vit C which aids in whitening and cleansing pores.

Super Healthy Fluffy Banana Milo Pancakes

You can't resist this. It's healthy, high protein , FLUFFY!
It's only 360 calories for this stacks of pancakes. 
Oh nomnomnomnomnom! :)

Perfect for lazy weekend 's morning :)

You'll need :
1 medium length banana ( mashed )
1/2 cup milk
1/2 cup porridge  oat
3 tbsp milo 
2 egg whites 

Steps :
1. Cook the oatmeal with milk in the microwave for 1 minute.
2. Mash the banana and stir in the milo powder, set aside.
3. Beat the egg whites with electric beater. Until stiff .
4. Mix the oatmeal with the banana mixture. Fold in the egg whites.
5. Lightly grease the skillet. Pour a ladder full and cook on medium low heat. 
4. Serve !

Taiwanese Pancake

This is a well known taiwanese snack. It's normally found in night markets and even tough it's tasty, it's usually really oily and of course, fattening. So this is my healthier version of the pancake.

You'll need :

100g medium protein flour
50g wholemeal flour
1 medium-sized potato
2 tbsp olive oil
1/4 tsp salt and pepper
45ml warm milk
40-50g scallion & mozzarella cheese

Steps :

1. Peel the skin of potato and boil it in salt water until soft. Once that's done, dry the moisture in the potato with a clean towel and mash it.


2. Once that's done, dry the moisture in the potato with a clean towel and mash it.


3. Mix all the ingredients excluding scallion and cheese.


4. Kneed the mixture into a dough and add in the scallion and cheese gradually by folding it into the dough. Feel free to sprinkle flour if it gets too sticky.


5. Let the dough rest for 30 minutes approximately.


6. Cut them into six pieces and roll them out flatly.


7. Pan fry them with just a little canola/olive oil until golden brown. If you want a healthier option, just bake it.


8. Eat them as it is or drizzle sauce of your choice. Enjoy :)

Healthy Guilt-free Sundae !

sunshine + sundae = perfection!! 

Ice cream! 
Yes ice cream, but healthier way!

This recipe taste exactly like those typical smooth vanilla ice cream that you always been craving for. 

Serve 1
You'll need :

1  medium banana (7' inches) 
1/2 cup Greek yoghurt 
1 tbsp honey
1/4 tsp vanilla extract
Toppings of your choice  ( check out my homemade healthy trail mix! ) 
  Or any berry jam if you like berries sundae
A blender 


Steps:
1. Slice the banana and freeze until harden.
2. Blend together all the ingredients except the toppings once the banana is harden. 
3. Pour out and top with your favourite toppings. enjoy ! 
Or you can further freeze the ice cream. 

 
Trust me you'll have the most delicious guilt-free ice cream ever!!

Homemade healthy trail mix

This healthier and no sugar added trail mix is best for snacks or with cold yogurt! 
Or top with sundae ice cream ..mmmmmm
Serve 1-2 

You'll need : 

1/2 cup of porridge rolled oats 
2 tbsp of honey
1/4 cup of nuts 
Dried fruits of your choice
Chocolate chips 
Seeds of your choice


Steps :
 
Preheat your oven to 180°c

1. Combine the oats and honey in a bowl, and roast together with the nuts and seeds. Shake them periodically to avoid burnt.

2. Roast until golden brown and let cool, chop the nuts coarsely if you prefer, then stir in dried fruits and you're done! 

It's crunchy and sweet without adding excess fats and sugar. Happy cooking !:)
