Fluffy yogurt waffle / pancakes ( without waffle iron )

I don't own a waffle iron at home, so I gotta make them on a griller! Lines formed on the waffles are very pretty as well!
These super fluffy waffles are what I can't resist of!

You'll need :

1 cup all purpose flour
1/2 cup whole wheat flour (or just use all all-purpose)
1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp kosher salt
2 Tbsp raw sugar (or substitute granulated white sugar)
2 large eggs
2 tsp vanilla extract
1 1/4 cups buttermillk or plain yogurt
1/2 tsp apple cider or white vinegar

Steps:

1.Preheat your grill pan on medium heat. Prepare a wire cooling rack on the side.

2.Whisk together the flours, baking soda, baking powder, kosher salt, and sugar.
In a separate container whisk together the eggs, vanilla, buttermilk, and vinegar. Pour the wet into the dry and stir gently until fully combined and no dry spots remain (you will have some lumps,that's good)

3.Brush your grill pan with the oil, and ladle half a cup of batter into the center. Lower heat to low. Let cook 3-4 minutes until crisp.
Flip, Cook an additional 3 minutes, then remove and let cool on a wire rack. Repeat with rest of batter.
Remember these can only flipped once, or else your waffles would not turn out pretty. :)

Serve immediately.

Skinny Breakfast : Fruity Carrot Oatmeal

Time to get creative! When I was thinking about what's for breakfast tomorrow, and I saw carrots in my fridge. And I was like, how about cook the oatmeal with carrots and dried fruits? I tried. And it's awesome! I added some nuts for wonderful crunchy texture :)

You'll need :

1 cup of rolled oats
2 1/2 cup of water
Sweetener/honey/sugar ( your preference )
1 cup of grated carrot
A handful of ( apricots, walnuts and almonds, cranberries , raisin , goji berries etc.. ) of your choice
1 apple ( cored and diced )
Some grapes

Steps :

1. Cook the rolled oat with water until its almost done.
2. On medium low heat, add in all the ingredients and simmer for 8-10 minutes. Add in your sweetener/honey/sugar at this time because the sweetness from the fruits might be enough :)
3. And now it's done!

This is a very versatile recipe, you can always substitute with your favourite dried fruits. It's not really much like a normal oatmeal like you would eat it plain with fruits, it taste like porridge ! Yummmmmmmm
Also you can spice it up with cinnamon or nutmeg. I won't judge :D
The sweetness from the carrots is really tasty !
You might need to add more water if it gets too stiff.

This serves 2-3 hungry people

My "bapple mango" smoothie

Banana + apple = Bapple
And.... Mango! *my favourite*
This is one of my favourite post workout smoothie.
It's so creamy and thick.
Trust me.
You'll LOVE it!!!

You'll need :

1/2 cup of plain low fat yogurt
1 ripe mango ( diced )
1 medium size banana ( you can go for a large one, I won't judge :) )
1 tbsp of peanut butter ( I used steffi's no sugar added )
1 apple ( cored and diced, and the skin is good for you )
1 scoop of protein powder ( I used Gold Standard 100% whey protein ) 
Some ice cubes

Steps ;

1. It couldn't be easier, just blend everything in a blender!!

Serve!

Cheers! It's loaded with potassium and protein that you need after your workout. It's important to feed your muscle!

Easy salad dressing : yogurt mustard

Low calorie dressings yet delicious and rich in texture. I served it with cucumber and tomato and it tastes great!
Since 1tsp of mustard contains only 4 cals, I will be more generous with the mustard!
You'll need :

Equal ratio of mustard and yogurt

Steps :

1. Mix well and serve!
