Fluffy yogurt waffle / pancakes ( without waffle iron )

I don't own a waffle iron at home, so I gotta make them on a griller! Lines formed on the waffles are very pretty as well!
These super fluffy waffles are what I can't resist of!

You'll need :

1 cup all purpose flour
1/2 cup whole wheat flour (or just use all all-purpose)
1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp kosher salt
2 Tbsp raw sugar (or substitute granulated white sugar)
2 large eggs
2 tsp vanilla extract
1 1/4 cups buttermillk or plain yogurt
1/2 tsp apple cider or white vinegar

Steps:

1.Preheat your grill pan on medium heat. Prepare a wire cooling rack on the side.

2.Whisk together the flours, baking soda, baking powder, kosher salt, and sugar.
In a separate container whisk together the eggs, vanilla, buttermilk, and vinegar. Pour the wet into the dry and stir gently until fully combined and no dry spots remain (you will have some lumps,that's good)

3.Brush your grill pan with the oil, and ladle half a cup of batter into the center. Lower heat to low. Let cook 3-4 minutes until crisp.
Flip, Cook an additional 3 minutes, then remove and let cool on a wire rack. Repeat with rest of batter.
Remember these can only flipped once, or else your waffles would not turn out pretty. :)

Serve immediately.

Skinny Breakfast : Fruity Carrot Oatmeal

Time to get creative! When I was thinking about what's for breakfast tomorrow, and I saw carrots in my fridge. And I was like, how about cook the oatmeal with carrots and dried fruits? I tried. And it's awesome! I added some nuts for wonderful crunchy texture :)

You'll need :

1 cup of rolled oats
2 1/2 cup of water
Sweetener/honey/sugar ( your preference )
1 cup of grated carrot
A handful of ( apricots, walnuts and almonds, cranberries , raisin , goji berries etc.. ) of your choice
1 apple ( cored and diced )
Some grapes

Steps :

1. Cook the rolled oat with water until its almost done.
2. On medium low heat, add in all the ingredients and simmer for 8-10 minutes. Add in your sweetener/honey/sugar at this time because the sweetness from the fruits might be enough :)
3. And now it's done!

This is a very versatile recipe, you can always substitute with your favourite dried fruits. It's not really much like a normal oatmeal like you would eat it plain with fruits, it taste like porridge ! Yummmmmmmm
Also you can spice it up with cinnamon or nutmeg. I won't judge :D
The sweetness from the carrots is really tasty !
You might need to add more water if it gets too stiff.

This serves 2-3 hungry people

My "bapple mango" smoothie

Banana + apple = Bapple
And.... Mango! *my favourite*
This is one of my favourite post workout smoothie.
It's so creamy and thick.
Trust me.
You'll LOVE it!!!

You'll need :

1/2 cup of plain low fat yogurt
1 ripe mango ( diced )
1 medium size banana ( you can go for a large one, I won't judge :) )
1 tbsp of peanut butter ( I used steffi's no sugar added )
1 apple ( cored and diced, and the skin is good for you )
1 scoop of protein powder ( I used Gold Standard 100% whey protein ) 
Some ice cubes

Steps ;

1. It couldn't be easier, just blend everything in a blender!!

Serve!

Cheers! It's loaded with potassium and protein that you need after your workout. It's important to feed your muscle!

Easy salad dressing : yogurt mustard

Low calorie dressings yet delicious and rich in texture. I served it with cucumber and tomato and it tastes great!
Since 1tsp of mustard contains only 4 cals, I will be more generous with the mustard!
You'll need :

Equal ratio of mustard and yogurt

Steps :

1. Mix well and serve!

Skinny Breakfast : NON-FAT apple yoghurt oatmeal

Yes you're right! No fat AT ALL! Try this every morning for 1-2 weeks and you'll be surprised when you weigh yourself next time.

You'll need :
basic voluminous oatmeal - recipe
1/2 cup of oat ( I used Monster Health Product) Preferably Rolled-oats
1/2 cup of water
3/4 cup of skim milk
1/2 cup of non-fat original yoghurt
1 packet of stevia or sweetener


Add-on :
1-2 Fuji apple (diced)

Optional :
Cinnamon
Your other favourite fruits
Applesauce

Baking with Yeast : Homemade Wholemeal Bread (Tangzhong Method)

Nothing is better than homemade bread! Warm yeasty smell of fresh bread is what i can't resist.
Thick cut slices of bread are perfect for french toast! You might be wondering, what the heck is 'tangzhong'? Tang1 Zhong3 is actually a cooked flour paste and add into your bread dough. It gives your bread a wonderful moist texture. Wholemeal bread is rich in fiber and lower calorie than normal white bread. Give this a try and share with your friends and family!

You'll need :

To prepare Tang Zhong :
1/3 cup of bread flour (50 grams )
1 cup of water (250 grams )

Steps :

1. Combine bread flour and water in a pot.
2. On low heat, cook it until it comes into paste.
3. Keep stirring to prevent burning.
4. Cook it for about 2 minutes. Let cool.


                                                                                                                     

Ingredients : 

3/4 cup of milk ( i used skim milk )
1 whisked egg
1 Tbsp of sugar
Pinch of salt
2 1/2 cup of wholemeal bread flour
1 Tbsp instant dry yeast
1 Tbsp unsalted butter, soften at room temperature



Steps :



1. Mix the egg, milk and tang zhong in a bowl.









2. Combine the dry ingredients in a large bowl. ( sugar , salt , bread flour and dry yeast )


3. Make a whale in the center of the dry ingredients, then mix the wet into the dry )


4. Stir well with a wooden spoon.

5. Knead it either with your hands or a mixer with dough hook attachment.

NOTE : It is very elastic. When you stretch the dough into a thin membrane (almost translucent ), it should break into a round whole. Don't ever over knead it ;)




6. Then knead in the softened butter.

7. Let the dough rise for about 30 minutes or until it has doubled its volume at a warm spot. Remember to cover it with a cling film to prevent it from drying and forms a crust.



8. Transfer the dough to a clean floured surface. Deflate it and divide into 3 / 4 equal portions.
Knead it into a ball shape. Flatten it and roll up. Then Flatten it again. AND roll up again. Position them into a parchment paper lined loaf pan. Repeat this with other portions.






8. Leave it for the 2nd proofing, about 30 -40 minutes.
9. Bake it in a preheated oven (170 C) for 30-35 minutes. You know its done when you tap on it and you will hear hollow sound from it.
10. And now it's DONE! slice it and serve with your favourite spread . Keep them in an air tight container once it has cooled thoroughly.
