Mexican Corn Cakes

Tasty flavourful Mexican dishes are the best! Corn is one of the traditional ingredients, corn cakes are the best finger food  to bring for a party !

You'll need :

1 1/2 cups milk
1 egg
1 1/2 cups ( 1 can ) corn kernels 
1 cup shredded cheddar cheese 
2 heaping tablespoons of chopped basil ( 1 tbsp for dry) 
2 3/4 cups of all purpose flour
3/4 cup corn meal
1 tbsp baking powder 
3/4 tsp salt 
1/8 tsp pepper


1. Combine milk , egg, corn kernels, cheese and basil in a bowl.
2. In a separate bowl, combine flour , corn meal, baking powder, salt and pepper.
3. Transfer wet ingredients into dry ingredients and mix well until lump free.
4. Lightly butter the skillet and heat up over medium heat. 
5. Spoon scant 1/3 cup of the batter and cook until the edges are browned and flip. Cook for another 1 - 2 minutes.
6. Serve !! 

* may serve with maple syrup or honey instead and with that intention add a few tablespoons of sugar to the batter.
