Scottish shortbread cookies



With a cup of tea or coffee, shortbread is always the best classic accompaniment to your afternoon tea.
This rich and crumbly cookies will make your day.
I promise.


You'll need:
250g butter ( soften )
85g rice flour
85g sugar
3 3/4 cup of all purpose flour

Steps :

1. Sift together the rice flour and all purpose flour, set aside.
2. cream the butter and sugar until light.
3. Combine the flour and butter mixture together, gently knead them with your hands.

4. Roll out about 1/2 - 1 cm thick, poke the dough with fork. 

5. Divide them into cookies evenly, bake them for 20 minutes, or until golden brown.
6. Douse with Sugar as soon as they come out from the oven. Let cool on a wire rack.
Enjoy!

Guilin Fried Ribs

Fragrance of the spices and marinates, you can't resist! :)



You'll need :

Ingredients A :
300g pork ribs 
20 g water

Ingredients B :
50g onions
50g celery
50g carrot
2 red chillies 
50g chopped garlic

Seasoning A :
 50g soy sauce
50g oyster sauce 
20g chicken stock granules
20g sugar

Seasoning B :
50 g all purpose flour
50 g corn flour




Steps:
1. Stir all ingredients B together until well-mixed, put in ribs and marinate for about 2 hours.
2. Stir flour and corn flour together until well-mixed, add in marinated ribs and stir to coat it well.
3. Heat oil in wok, put in coated ribs and fry for 4-5 minutes until cooked, dish out to serve!!

Enjoy!

Stir Fry Egg With Shrimps

A quick and simple Chinese stir fry dish. Serve best with a bowl of rice. Yum! :D


200gm shrimps
3 egg whites ( beaten)
3 egg yolks ( beaten )
1 tbsp soy sauce
1 tsp sesame oil
Pepper to taste

Steps :
1. Heat 2 tbsp of cooking oil in a nonstick pan, stir fry shrimps until cooked.( just turned into pink color, do not over cook it, it will gets tough and rubbery )
2. Add in egg whites, stir fry until cooked.
3. Add in egg yolks to cook lightly, pour in the seasoning and serve hot.

Amazing bread pudding

It's weekend ! It's time for indulging breakfast ! :D 

You'll need :

2 slices of bread
1 egg
1/2 cup of milk
2 tsp butter
2 tsp sugar
Chocolate ( of your choice)

A ramekin 

Steps:
1. Preheat your oven to 180°c.
2 butter and cut the bread into cubes.
3. Place the cubed bread into the ramekin and distribute the chocolate  evenly.

4. Mix the egg, milk and sugar until homogeneously mixed.

5. Pour the egg mixture into the ramekin. 

6. Bake for 15 minutes or until golden brown.

Taste even better with a scoop of ice cream! 


Fluffy pancakes

Title says it all! Light and fluffy pancakes are what we looking for.

You'll need :

100g of cake flour (1 1/4 cups)
100g of milk (1/2 cup)
1 egg yolk
1 egg white
1 tsp baking powder
1/4 cup sugar

Steps :
1. Sift the cake flour and baking powder, set aside.
2. Combine the egg yolk and milk.
3. Stir in the dry flour mixture until just mixed.
4. Beat the egg white with sugar until peaks form.
5. Fold in the egg white into wet mixture gently. Do not over mix.
6. Lightly grease your skillet on medium heat.
7. Flip the pancakes when bubbles start to form. Cook until brown
8. Serve!

Best with jam and butter or honey. :)

Mexican Corn Cakes

Tasty flavourful Mexican dishes are the best! Corn is one of the traditional ingredients, corn cakes are the best finger food  to bring for a party !

You'll need :

1 1/2 cups milk
1 egg
1 1/2 cups ( 1 can ) corn kernels 
1 cup shredded cheddar cheese 
2 heaping tablespoons of chopped basil ( 1 tbsp for dry) 
2 3/4 cups of all purpose flour
3/4 cup corn meal
1 tbsp baking powder 
3/4 tsp salt 
1/8 tsp pepper

Steps:

1. Combine milk , egg, corn kernels, cheese and basil in a bowl.
2. In a separate bowl, combine flour , corn meal, baking powder, salt and pepper.
3. Transfer wet ingredients into dry ingredients and mix well until lump free.
4. Lightly butter the skillet and heat up over medium heat. 
5. Spoon scant 1/3 cup of the batter and cook until the edges are browned and flip. Cook for another 1 - 2 minutes.
6. Serve !! 


* may serve with maple syrup or honey instead and with that intention add a few tablespoons of sugar to the batter.

Healthy oil-free chicken nuggets

Cravings for KFC? Why not treat yourself with this healthy nuggets? 
Yes please! 

You'll need : 

150g of boneless skinless chicken breast ( or thigh)
 Breadcrumbs / Panko ( grind some stale bread in a food processor) 
 
Seasoning:

2 heaping Tbsp of Ketchup
1 tsp of HP sauce 
Pinch of cayenne pepper
1 tsp mustard
Salt and pepper to taste 
Handful Corn flour 


Steps : 

Preheat your oven at 180°c 

1. Wash and pad dry the chicken breast. And cut into strips
2. Using a meat hammer or back of a pan gently hit it to tenderize the meat.
3. In a bowl, mix in all the seasoning and coat the chicken well. 
4. Add in some corn starch and mix, just enough to coat the surface . ( you'll notice it forms a sticky layer)
5. Coat them with breadcrumbs and bake them on a wire rack.

180°c , 10- 15 minutes. 

Serve ! Taste divine !
